American chef Rodney Wages, former chef owner of the the one Michelin Star Avery in San Francisco,Wages fell in love with Edinburgh on holiday in 2023 and opened The Avery in 2024 on the site of the former Stockbridge restaurant. He is excited to bring his unique perspective and techniques to Scotland while celebrating the bounty of Scottish produce, meat, and seafood.

On 10 Feb 2025 Michelin Guide UK and Ireland came to Scotland for the 1st time in their 125 years, and The Avery was presented with a Michelin star, in less than 1 year from opening, along with other new Michelin Star for Scotland, Lyla, Stuart Ralston's seafood focused tasting menu restaurant, on Royal Terrace, Edinburgh.

Avery joins the 13 Michelin Star restaurants in Scotland, with 7 in Edinburgh, including Tom Kitchin’s The Kitchen in Leith who also has The Scran & Scallie in Stockbridge.
