Specially selected and tasted many cheeses by visiting Herve Mons-Fromager Affineur caves in Saint-Haon-Le-Châtel in Loire and also Neal's Yard Dairy in London. Cheeses have been matured in specialised conditions to ensure the finest taste and texture.
